  • I do sometimes roast with lemon juice and water-yum!
    Ended up roasting normal and sweets in duck fat, and carrots and parsnips in remoska with thyme and olive oil as wouldn't fit in roasting tin. How do people do christmas??? Am hoping to do goose this year-how big are they (dimensions for 5kg one?)

    You can do it but you have to be well organised if you only have one small oven. Cook the bird first, then you take it out to rest for a bit and then do the roast potatoes and veg whilst it rests and you carve it. Sorted!!

    By the way, how much water do you put on roast lemon and water potatoes?
  • I tend to do a greek-style lemon roasted potato but cut down on the oil in this recipe (and usually just use regular water maybe with a little marigold powder rather than chicken cubes). Absolutely delish :D

    Oh and I use fresh thyme and rosemary, or sometimes dried oregano. I don't keep dried thyme or rosemary in as have a HUGE amount growing just outside back door :D

    My fave with lamb is:

    Steam some broccoli.
    In a frying pan, put some hm breadcrumbs and some olive oil, and fry till golden. Add some chopped up anchovies as well.
    Then toss the crumb and anchovy mix with the broccoli.

  • I have a recipe for a potato cake which goes with lamb, it looks fab and you can cook it in a cake tin or anything like that really.

    2 - 2.5 lb potatos
    75g melted butter
    salt & pepper

    preheat oven to 7 or 220

    Take 3/4 larger pots and put them to one side.

    Peel the smaller pots and slice legnthwise very thinly. Peel large pots in to a smooth almost cylindrical shape (I don't bother with this) Slice legnthwise to provide the right length of of slice to line the cake tin. It's also best to cut two of these pots 1/2 inch thick. Dry all of the potato slices on kitchen paper.

    Brush tin with melted butter saving the rest to work through the pots. Cut a disc of 2inches from one slice and place it in the centre of the tin. Arrange the thicker potatoes around thisl overlapping slightly. Line the edge of the tin with thinner slices overlapping and standing upright. Then place the rest of the spuds in a bowl mix with salt/pepper and pack and press until they are all in the tin. cover with foil and put in oven. They take 1 hour 20 mins, after 30 mins remove the foil from the tin and cook until tender & golden brown. If it lacks colour, brush with butter and stick under a grill for a few minutes.

    It sounds like a faff but is splended with lamb.

    I am looking for ideas for vegetable side dishes that can possibly made in advance & reheated or that are very simple yet look fab - I am trying to get ahead with Christmas planning this year & seeing as I'll be 37wks pregnant I want life to be as easy as possible

    Braised red cabbage is an absolute winner, I use Delias recipe and it freezes and reheats beautifully http://www.deliaonline.com/recipes/traditional-braised-red-cabbage-with-apples,809,RC.html we have it with roast poultry or things like steak pies.
  • Green beans with pesto is yummy...don't know if it's an Xmas type dish or not but very simple, cook green beans, add pesto. :)

    I can 2nd this recipe. I make it every year and freeze the spare.
