What about hassleback potatoes?
They're just small/medium whole potatoes with lots of parallel splits along the length of them. You put a skewer carefully through the potato lengthways and then slice along it's length with a sharp knife. The skewer stops you slicing all the way through the potato. Then take the skewer out, sprinkle with a little salt and roast them."carpe that diem"0 -

I usually do sauce based meals ie, spaghetti bolognese, cottage pie, beef stroganoff, beef stew and my son hasn't been eating them. For the last week I have been doing meals based on meat, 2 veg and potato.. and he has been eating them. I know it will get boring, so I thought I would make them more interesting by making side dishes different like cauliflower cheese, potato dauphnoise that sort of thing but I can't seem to find any ideas on here - tried indexed collections and search. So could someone point me in the right direction or recommend any ideas for me to try.

Champ - mashed potatoes with chopped spring onions added.
Colcannon - mashed potatoes with cooked cabbage & leeks added (lots of butter too!)
Dauphinoise - thinly sliced pots layered with seasoning, grated cheese and a smige of garlic in a casserole, cover with milk & cream and bake, lowish gas say about 3 for and hour and half or so. I have to say I shy away from this one as I find it hard to get the potatoes to cook evenly. I think Nigella does a stove top version though.
Cualiflower and cheese, cooked cauli with cheese sauce, you can brown the top if liked. Especially nice with gammon, imo
I like carrots in parsley sauce too, also carrots cooked and add tarragon butter at the end.
Another one popular here are roasted veggies, parsnips for DD2 and DS or mixed peppers, mushrooms and red onoins, cut up and mixed with oil which has a herb or spice added. (Oddly, I use chargrill chicken seasoning here.)0 -

Am having people for dinner tomorrow night-cooking slow roasted leg of lamb in white wine but struggling for side dishes-was planning on roasted spuds and veg, have limited space in the oven so will fit 2 large roasting trays in.
Was going to parboil spuds, do some carrots sweet potatoes leeks maybe parsnips (or sweetcorn-I have some in the garden or would that just be weird?) just wondering if I should do something green-have cabbage kale or green beans. I do have a remoska but planning on doing rhubarb crumble in it
Any fab ideas for "leave em be" side dishes?0 -

I used to hate cous cous but now I can tolerate it - only in moderation though; it's very dull.
I'd go for roasted potatoes - everyone loves roasties, and then lots of nice fresh veg boiled or steamed on the hob. Maybe some mash with chives?0 -
I like baked vegetables done with some herbs & a drizzle of olive oil.
Either trad root veg (carrots, parsnips, leeks, etc)
Or med veg (red onions, courgettes, peppers, cherry toms, etc)0
