The best way is to get a sugar thermometer, which has the different stages marked on it - jam, soft ball, hard ball, small crack (no puns please!), crack and caramel are what are marked on mine alongsise the appropriate temperatures.
Besides not getting it out of the tin.:doh:......it stayed really tacky .
Maybe I'll have a look for one of these thermometers later today.

Well, today Master Pink and I made treacle toffee using robowen's recipe. The kitchen looks like it's been hit by a bomb and young Master Pink had to be bathed afterwards, but it's absolutely delicious!
Thank you rob, for not only giving us a lovely recipe, but a fun afternoon. :T

I didn't know then how mine would turn out........in fact it tasted so good that there is very little left to send.
And while we're on the subject, rob.......How come you taught me how to make it myself, but offer to send some to E'lass? That sounds like favouritism to me.

Not sure if this has been posted before, but I would like an easy recipe for making bonfire toffee. I used to have a simple recipe, which sadly - I lost.
