Ginger beer recipe?

Does anyone have a recipe for ginger beer? I'm thinking it has got to be cheaper to make my own than keep buying Tesco's own.

Have got so many ideas and recipes from here I was hoping someone would be able to help!

    You can make a soft version though. Blend or grate some ginger (handful or 4") and push it through a fine seive or muslin. Boil one part water (500ml) to one part sugar and let cool. Add the ginger juice and the juice of two squeezed lemons.

    This leaves you with a cordial that you can either mix with fizzy water as needed or still water from the tap.

    You can experiment with ginger, sugar and water ratio as it can be very hot compared to purchased stuff.

    Don't buy Tesco Ginger Beer, it has aspartame in it. You are better off buying the better stuff, can't remember the full name but it's something like Old Jamaica Ginger Beer, sorry but it is more expensive, hence the request for a recipe

    I have a lovely recipe for ginger beer will look it out and post it ,,, its in my wine recipe folder ,, when I find that

    I used to make it for the kids but then found out it was alcoholic,, so soon stopped making it

    4lbs APPLES
    2OZS BRUISED ROOT GINGER
    1 TEASPOON WHOLE CLOVES
    1 TEASPOON CINNAMON
    3LBS SUGAR
    2 GALLONS WATER

    METHOD:-

    1. Grate the apples up with a suet grater and put them in a bowl with the cold water,,
    2. Stir every day for up to a week then strain
    3. Add the sugar, cloves, cinnamon, and ginger(well bruised).
    4. Stir well and leave overnight
    5. strain & bottle,, cork lightly for a week then it is ready to drink and tastes delicious

    Thanks everyone, I shall have a nice weekend experimenting with those recipes!

    I had wondered why it was called ginger beer as I never realised it could actually be alcoholic - I know, I'm a donkey!!

  • :A I love Tesco and Old Jamaica ginger beer, the taste is just amazing! So at £1.02 a pop (no pun intended!) for six cans of the Tesco stuff, I was wondering if I could make my own with ginger extract and fizzy water. Anyone tried it?

    My DH (resident expert for odd recipes) says yes you can make it but it wont taste like Old Jamaican Ginger Beer, it'll taste allot more bland. He says think more ginger tasting lemonade, but here's his recipe.

    Lots of ginger
    Still water
    plastic bottle
    1 lemon
    1 cup sugar
    1/4 teaspoon yeast

    Mix the juice of one lemon with the juice and pulp of the ginger (grate then squeeze) add to the sugar and then to 1/4 of the water. Leave for 2 days to infuse. Strain and mix resulting liquid with the rest of the water. add the yeast. put into the plastic bottles (glass explodes) and leave somewhere warm for 2 days. Its done when the bottles are too solid to the touch. Open carefully as will be very fizzy.

    The reason I thought of the ginger root extract and fizzy water is that they are the main ingredients on the can... well, that and some sugar etc! Yours sounds like it would need to ferment, am I right? Never had a go at making drinks that way (although I saw Hugh F-W's elderflower champagne and it looked great). I will try it!

    Hi, proper ginger beer is made using a ginger beer "plant".

    To start your plant off you need:
    300ml tepid water
    1 teaspoon sugar
    25g fresh yeast or dried yeast (NOT the fast acting stuff)

    Mix the ingredients together in a jar, and cover with a piece of kitchen towel or clean teatowel. . Then every day for the next 7 days stir in
    1/2 (half) teaspoon ground ginger
    1 teaspoon sugar
    Use a wooden spoon, as a metal one will react with the yeast.

    After 1 week strain off the liquid (using a nylon sieve, not metal), and keep this to one side. Make sure you've strained it really thoroughly; if you get any sediment in the ginger beer will explode when you bottle it. It may help to line your sieve with a piece of muslin.

    To make the ginger beer:
    heat 1 litre of water and dissolve 900g sugar in it. DON'T LET IT BOIL. Once the sugar has dissolved, stir in the strained ginger liquid, another 1.5 litres of water and the juice of 2 lemons.

    Bottle it, using bottles with corks in (because if you haven't strained your liquid well, then the cork will pop out; if you've used a solid bottle lisd then the bottle will smash.

    Leave for about three weeks. It's best stored somewhere where a popped bottle can't do any harm. The first time I made this, I didn't do a very good job of strainig (although I thought I had). We stored the bottles under the stairs, which was a mistake, After that, they went in the garage.

    To keep your plant going, put half of the thick brown starter into a clean jar, and carry on adding ginger and sugar every day. The other half can be thrown away - or given to someone else so they can have their own plant.
