Can a company view my holdings in a nominee account? I am changing jobs and it says I cannot own a particular share. I do not want to sell, but will they be able to find out if I keep it in my nominee account?

Are you looking to get fired with cause for an ethics breach? It's not even worth thinking about it unless the job is a hobby and you're independently wealthy.

Usually nominee accounts don't disclose all the beneficial owners but some do. You'll have to ask your particular nominee account operator.

Is that because being a shareholder in that particular company would put you in an unethical/privileged position, or because the company in question is a competitor to your prospective employer?

Whatever the reason, as James says, if you do get found out you would have breached the terms of your contract and you'd be fired.
