Hello all - am back from holidays and back into meal planning. DH is away this week and he has taken the car, so I have to work with what's in the house and garden (or cycle 10 miles to the shops). I am noticing it is best to plan even if I am on my own, otherwise I don't eat properly! It will be simple, though.

thur - chow mein with leftover chicken
fri - courgette stuffed with quinoa
sat - HM pizza or calzone (experimenting with Artisan bread dough)
sun - mince curry from freezer
mon - courgette, tomato & potato fritata with chorizo
tues - HM tuna-burger (new recipe to try out)
wed - baked potato with blue cheese and salad
thur - spaghetti with olive oil, chili and garlic

More sophisticated menus next week when DH is back!

Saturday – Sweet & Sour Chicken, Rice & Prawn Crackers
Sunday – Haddock, Potato, Onion & Parsley Bake & Green Beans
Monday – Sweet Chilli Turkey Steaks, Salad & Chips
Tuesday – Freezer Chilli, Rice & Cornbread
Wednesday – Lamb Rogan Josh, Rice & Naan
Thursday – Turkey Sausage & Bean Casserole & Jacket Potatoes
Friday – Homemade Chippy Tea - Oven Cooked 'Chips', Oven Cooked Cod in Batter & Creamy Garlic Mushy Peas

Meal plan may get swapped around this week and we may end up going out for tea on Friday as DH is off on holiday, but all being well the meal plan above is what we're having, and aside from some baked beans for Thursday we have everything in already, should be a cheap week :T

    Hiya herby :hello:

My double salmon sauce is made with:
1 salmon portion nuked in the microwave & flaked (half price @ MrT ;) £5 for 8)
    value smoked salmon (£1.18)
creme fraiche (I use T finest 85p - not the cheapest /100g but it is the cheapest pot you can get)
pinch of oregano (or herbs of your choice :))
Serve with pasta & petit pois/salad

This makes more than enough for 2 greedy portions so could probably serve 3 or 4 with a side salad. This is one of the most expensive meals I do (£1.45 per portion for2) so we dont have it that often but it is really yummy. :D
