Now I've checked the settings on my iPod many times in search of this and can't find it. I'm sure I remember it working when I first got the iPod, and I certainly didn't turn it off so I have no idea what's happened!

The database that holds the artwork can become corrupted. You need to connect your iPod, then when it pops up in iTunes, go to the music tab, uncheck "Display album artwork on your iPod" and then click apply.

Then you simply check "Display album artwork on your iPod" again, and then click apply and it should put the album artwork back on it.
