Hi as part of my grocery challenge this month am looking through store cupboard. I have a bag of gram flour - don't know why i bought it and don't not what to do with it?!!

its great for batters (onion bhajis etc) and good to make pancakes with... also its gluten and wheat free (I think dont quote me on that!!)0

Make Pakora with gram flour.
1/4 cauliflour
1 large potato
1 onion
1/4 tsp red chilli powder
1 tsp mustard seed
1 tsp cumin seed
2 cups gram flour
salt to taste
Blanch the veg first to very slightly soften.
Optional :
fresh chopped spinach
1 green chilli
Chop cauliflour up small & very thinly slice potato. Chop onion & mix together in a large bowl, add mustard seed, chilli powder, cumin seeds & optional ingredients. Add salt & gram flour mix together with cold water to bind together like a batter mix. Drop spoonfuls into hot oil & cook until golden brown, drain on kitchen paper. Enjoy;)

Sauce for pakora.
Mild sauce:
Small carton Natural yogurt
1 tsp mint sauce
Mix to taste.
Hot sauce:
Small carton Natural yogurt
1tsp hot chilli sauce(depending how spicy you like it)
1 tbls tomato sauce(add more if needed)0 -
You can make fritters using gram flour (basically make a batter using the gram flour and then dip any veggies in this and deep fry)
Recipe for the batter:
Gram flour
Water
Salt
Crushed cumin
Black pepper
Baking Powder
Mix all the above ingredients in a bowl and whisk with a hand whisk until smooth and frothy. For best results, sift the flour first.
Then, slice thinly, potatoes and dip these in the batter and deep fry in very hot oil. Place in a bowl lined with kitchen paper to absorb excess oil.
You can also fry onion rings this way or even aubergine or yam.

I bought a 2kg bag of gram flour at Tesco this week with the intention of making onion bhajis (from the Economy Gastronomy book;)).
But aside from bhajis and pakoras what else is it good for? I've read that it is good for coating meat and fish for frying instead of breadcrumbing. Any other ideas?0
