I need organising!! Help!!!

Hi,
I am a single mum, work full time and am in need of some serious old style organising!
Firsty, my kitchen cupboard seems to have lots in it, but never anything that I can seem to make dinner with!! I'm always missing stuff, so what are the staple things I should have in the cupboard??
Next, I need help planning meals.. I've got into an awful habit of just popping in Supermarket on my way home from work and end up spending £8-12 each time, but I always seem to need stuff!! My daughter has packed lunch at school, so always buying sandwich stuff, or fruit, bread etc, then I pick up something I fancy for dinner and before you know it I'm in double figures!!
Please help me!!! My mum is the same, so obviously where I get it from, but I want to break the habit and get organised!!!

Do you have a slow cooker?? that would help with the having dinner ready when you come home so you may not feel the need to stop in tesco to get a quicky meal.
Also with school lunchboxes could you not put money aside and each week jsut go and get a little top up of fruit if you have too but get the rest fo the stuff and store in a freezer - like if she has rolls get a few packs and freeze them that way you could defrost a pack each week etc 9the same could apply for bread too.
Also you could get your daughter in on the menu planning, she can help with a few ideas towards it and then maybe she could help you make it.
Also why not prepare somethgin the night before - like if you need veg etc you could prepare it the night before and keep it in a bowl of water in the fridge.
Also batch cooking etc - that way in the mornign you can look in freezer to see what you fancy, get it out, leave it to defrost for the day and then it will jsut need nuking when you get in.Time to find me again0
