How to make green vegetables taste nice?

So, i am on a mission to eat more greens.

I have always had a problem with green veggies. I eat a lot of other veggies (carrots, bell peppers, butternut squash, celery) but all i think of when thinking of green veg is disgusting boiled cabbage _pale_

So, i have worked out that courgettes are edible raw. If they are cooked in any way, i cannot stomach them, but raw they taste quite nice. So i make 'zoodles' (julienned strips- like veggie spaghetti).

And tonight i just stir fried some broccoli with some garlic and chilli, just for a minute or 2, and it tasted OK.

Do you have any ideas for how else i can cook green veggies please? Or nice side dishes that i can make using green veggies?

    Always steam green veg never boil.

    Creamed spinach is gorgeous too. Use google for directions.

    Sauteed savoy cabbage is great too.

    I have tried creamed spinach and just cannot bear it.
    Haven't tried sauteed cabbage though, I'll give that a try.

    If you want to have something utterly gorgeous, then very lightly par cook some broccoli, green beans, asparagus and leeks. Cover with a delicious white sauce and some breadcrumbs/parmesan/butter on top and bake.

    Seriously though, consider roasting cabbage - just quarter it and roast for about 20/30 mins. Also nice with cauli

    Mix broc and cauli in cauli cheese

    fry sprouts with bacon and potatoes

    spinach in omelettes, curry, casseroles
    That sounds like a classic case of premature extrapolation.

    White cabbage is rather edible raw.. finely slice and add to salad. My OH eats broccoli raw.. I think it is gross but each to their own. Frozen peas I defrost and eat cold, or warmed through. Sprouts just heated through so they are crunchy and dont make your gravy cold!

    Why not just try them raw, lightly cooked, glazed (my friend LOVED glazed sprouts!!) Boiled, fried, sauteed, mashed until you find a combination you like.. just because everyone else eats stuff cooked to a sludgy souplike splodge on a plate doesn't mean that is how you are supposed to eat it.

    My ex-mil used to obliterate everything and her offspring lived on chips and junk food to avoid her gross cooking but I converted one to actual food!

    Avoid kale it is the stuff of satan.. and celery..

    spinach I chuck a handful in with patatoes in a creamy sauce.. so the leaves are just wilted rather than dead.. they can be added to salads too.. Or just as a lettuce substitute.

    Sounds to me that you find green veggies more palatable if they are raw or near to raw. So just eat all of them that way.

    Alternatively you could cook them, blitz them and add them to sauces, bolognaise, stews, etc.

    I dont seem to be able to cook green beans without them going 'squeaky' when i bite them! Would this improve if i used fresh instead of frozen?

    I hate cauliflower too, and hate cheese sauce.

    Spinach i dont have a problem with. I either eat it raw in a sald, or wilt in a curry etc like you suggested :)

    Kale hurts my teeth for some reason? Yes, not my idea of a nice food either!

    I have tried peas, but only boiled...i dont suppose there is anything else i can do with them? I didnt know peas were edible raw!

    Thanks. Yes, raw seems to be my preference. I would just love to find some cooked recipes that i like with them in, especially during winter months.

    Yes. Frozen veg is great don't get me wrong, but contains a lot of water obviously.

    So fresh for that dish is the way to go. Probably don't even need to pre cook the beans either really as the sauce will cook em, as green beans are delicate.... but gorgeous, as is asparagus, fresh in season only though.

    Ah, OK, thanks :) It seems that in order to find a way of making veggies palatable for me, i need to keep to fresh (and therefore in season).
    I'm going to Google seasonal veggies.

    I have heard of minted peas, which i think i might like because i like mint. But not sure how cooked the peas need to be.
