How to make green vegetables taste nice?

    Sounds lovely! I love zoodles (zucchini noodles) and also carrot noodles. I am going to be trying butternut squash and sweet potato ones this week too!



    You either buy a ridiculously priced spiralizer..or you just buy a julienne peeler and peel the raw vegetable into strips. Really simple.


    So, dinner tonight- i had half a courgette and 1 carrot, julienned into noodles. I stir fried 5 or 6 broccoli florets (it was almost half of the bunch i had) in the sundried tomato oil, with some garlic and a diced tomato. Then sprinkled over a little lemon juice

    It was so nice!

    Tomorrow i am trying cabbage. I'm going to steam it. How long do i steam it for (bear in mind i like veg to be almost raw, still with a little bite)? Do i cut it up into strips or anything, or just separate the leaves?

    Starting with the cabbage first...Cut it into dice or strips and steam for just a couple of mins, and test a bit to see what you think. You can always steam for another few mins until you know what's exactly right for you.

    Thank you regarding the courgette noodles. I already have a julienne peeler, so will give that a bash.

    I love broccoli, but tend to like it in a sauce, although can eat it just on it's own. The stalk is something else though, I just love that in stir fries or steamed. It's like having two vegetables in one! Cannot believe that most people throw out the best bit. :eek: If I'm using the florets, which I always do first, I cut up the stalk into strips and freeze straight away, so that there is no waste.

    re Broccoli and Cauli - I saw Jamie put it on a grill pan after par boiling for a couple of minutes in salted water I think. I have one of those pans so tried it myself - and it really does taste good! on a par with roasting only in a third of the time - and you get those gorgeous looking char marks! you cut the whole broc or cauli in thirds or quarters (depending on how big it is) rather than take the florets off....so you get all the wonderful goodness in the stalk too! and it doesn't go mushy and stink the house out!

    Does anyone have an opinion on Organic Vegetables? In my experience they taste much nicer. I am wondering if i should try some of the greens. I noticed that Tesco do Organic Cabbage yesterday.

    I'd go one better then that, grow some of your own if you possibly can

    Nothing tastes as nice as straight out the ground and straight on the plate. Even I will eat cabbage and sprouts we grow. They are so fresh they need so little cooking and the taste is really amazing. Sprouts don't have that mustardy flavour and cabbage isn't rubbery

    Oh and here's that recipe for the cabbage and carrots. I just use sweetheart cabbage as that's the only one I kind of like :)

    +1 for grow your own. Beans, peas & mangetout right off the plant are unspeakably delicious.

    Son, peering over my shoulder, endorses this [hm, that's where some of my crop went?!] but opines to improve green veg, add bacon.

  • Asparagus cooked in the oven in tin foil with some butter rubbed on them. (Optional added garlic) cook until tender.
    Tried them this way the other day.
    Really really nice bare in mind don't like them boiled but taste totally different cooked this way.

    Asparagus is nice rubbed with garlic, under the grill with olive oil and salt. :A

    Veg fritters are a great way of getting the benefits of greens but in a tastier way - mix chopped veg with one part flour and one part cornflour, herbs and spices of your choice and some sparkling water until its batter consistency - drop spoonfuls in to a frying pan with an inch of oil - fry both sides. Delish!

    Spears. Spears include tips, so you get both - and - there's actually pretty much s0d all in tips, so you need the full length spears - if it doesn't feel like you've eaten there's no point :)

    yes, buy the spears why pay for the bits that have been cut off? oh and when preparing them for cooking don't cut the stems, just bend them until they snap - that way the woody part automatically gets discarded and you get ALL of the delicious tender part.
