Christmas Leftovers 2015

Hi,
Was interested to hear what OS make with all their leftovers this Christmas
We'll have a ham Christmas Eve and a turkey Christmas Day. Boxing Day we'll have a buffet of cold meats with stuffing, pigs in blankets & chips. Turkey will get chopped up to make Turkey a la King (turkey in a white sauce with green pepper) and leftover bits of turkey & ham will go in a pie with puff pastry.
Can't wait :rotfl:

We will have a second smaller turkey dinner on Boxing Day. I don't buy a massive full turkey anymore, we have a turkey crown and a ham which I boil then finish off for 30mins roasting. Any left overs used for sarnie's for a couple of days. After that it's in the freezer to be used at a later date either dinners or quiches, patties, soups,. I must say we've down sized on our meats so not as much left over. The extra money is used to buy other meats whilst on special offer on the build up to Christmas and put in the freezer. Why pay full price when you may get it YS0

They only leftovers we will have is the turkey. Although there are only two of us I still like a proper turkey not a crown.
We will freeze the leftovers and have as a roast dinner later on during January and February.
We will save some as cold cuts for boxing day.0 -

Left overs are just a name for the makings of another meal or four
We have a turkey and a ham for Christmas
I boil then roast the ham. The stock is then saved for pea and ham soup, that will make about 12 portions
Turkey with bubble ( using up the cooked veg ) Boxing Day
Ham egg and chips
Jaimies leek and turkey pie will feature at some point
Quiches
Sandwiches
We don't buy a lot of snack type food but there will be hm mince pies and cream for desserts and I have the most beautiful stollen given to us
Oh and a Stilton is compulsory That will get used up in grilled bacon and Stilton rolls and broccoli and Stilton soup and fave of all, melted on top to steak. Yum yum0 -
Any turkey left over goes into a Coronation Turkey for Boxing day buffet alongside the Gammon which is always served with salad, we then have Turkey and ham pie on the 27th and on the 28th we will have sliced gammon with egg and chips, the rest of the gammon is used in sandwiches for the rest of the week.
I usually buy a smaller but more expensive turkey these days, there is no point in buying a huge one and I know mine comes from an ethical source.
However I do buy three or four large gammon joints at this time of year because they are cheaper. I cut them into three joints each so we can enjoy cheap gammon throughout the year, we especially love it in the spring and summer with salad and new potatoes.
The carcass of the turkey is turned into a lovely rich stock for soups and the same goes for the gammon stock.Blessed are the cracked for they are the ones that let in the light

If I have leftover veg, gravy and stuffing on Boxing Day I will whizz it up into a simple soup as I have some baguettes in the freezer.0
