Sweet Chestnuts

just bought a load of chestnuts at Tesco's for 20p a kilo, couldn't resist the bargain but now don't know what to do with them!
Seem to remember my nan slitting the skin with a knife and boiling them in a pan. I've got no open fire to roast them on :(so any other suggestions for cooking them and recipes apart from stuffing?
I've got visions of them exploding and firing off in all directions around the kitchen! ;D

Also just remembered I have a few veggie cookery books so will look in them for some recipe ideas.

Hi, This was tradition in my family. Buy a sack from your local green grocers, about this time of the year, not when they first appear in the shops as they can be of poorer quality [have maggots old stock] Grab the family, give them all a knife, put some carols on the record player and away you go.
Make a slit in each one, boil in small batches, for approx 15 mins, you need to peel them while still hot, the hotter they are the easier to peel. They freeze well, I open freeze, then put into an ice cream container and take them out as and when you want. I add them to the turkey stuffing. Chopped into crushed meringue and whipped cream [Make into a bomb and freeze], just whole with sprouts, or sprinkle with a little oil and salt and bake for about 15 mins and eat. Lovely.

If you make a slit in the skin to prevent chestnuts from exploding (because air becomes hot and expands inside skin) you can also roast them in a roasting tin in the oven.

I put some in a casserole the other night - slow cooker job
Braising steak, onions, mushrooms, a carrot, handful of chestnuts (pre-cooked), seasoning, gravy/flour etc, good glug of red wine and the best casserole I've ever made. ;D

When roasting chestnut, in my experience, it depends on size, if big it might take 20 minutes like Sheel said, but if you pick them up from the park trees like I do, they will be small and might only need 10-15 minutes.
You need to check them after 10 minutes because if they roast too much they get very hard.

We do them in the oven too. I say we, actually hubby does them, he sees it as his job ;DBulletproof0
