What potatoes to serve with this?

Hi there all

Im doing for tea tonight

Chicken fillet with roasted courgettes, aubergines onions etc with a mustard, mushroom and leek sauce

Id like rice, but weve had it 3 times on the trot now and OH wont be keen I know that

So potatoes it is, what shal I do with them? Everything I think of wont "go"

OH has high cholestrol so nothing deep fried please!

    id have feta mash i think

    but then i will eat mash with anything lol

    ring in the changes by adding different things to it :)
  • How about potatoes roasted in olive oil, garlic and rosemary.
    Cut them small and they'll be cooked in 30 mins :)

    Little baby new potatoes would go nicely...:D

    Or if you have "large potatoes" to use up, I would try mashing them (I think that its "mashed potato" weather here in London today - they're comfort food when its wet and miserable!!;)).

    As you have the over on anyway, why not potato wedges? Don't peel them, just slice them lengthwise into about 8 wedges. Put some oil in a roasting tin and let it get hot, then put in the wedges, shake em about a bit and grind over some pepper and maybe a bit of salt. If you use it, that Marigold Swiss Bouillon powder is a good salt substitute. They usually take 20-30 mins depending on oven temp and wedge size.

    do you think that mash will "go" though, I ruled it out as a bit wrong as the sauce is made with creme fraiche and might be a bit claggy???

    I reckon potato wedges would be the best- yum! :drool:

  • If you don't fancy the wedges, garlic mash could be good. Or herby mash.
