Colby cheese is like soft mild cheddar, when I tried some it was underwhelming Mozarella would be a substitute or perhaps half and half with mild cheddar.

I'd seen a recipe for it before while idly browsing American recipe sites, so I knew it was out there somewhere! ... funnily enough I couldn't find the particular recipe I saw originally, but I expect the one mentioned above is better since it claims to be a Cracker Barrel clone :)

top secret recipes used to be all free, now they only allow you to view certain recipes for free. Unfortunately when I checked, hash brown casserole is one of the recipes that is being charged for.

I have however found some alternate recipes on another site which I use on a regular basis..............

    Hash Brown Casserole 1

Cracker Barrel Hash Brown Casserole 2

    Glorified Hash Brown Casserole

Cracker Barrel Old Country Hash Brown Casserole

The website I use is www.copykat.com and all their recipes are completely free. Another one to look at is ... www.kitchenlink.com/copycat.html

Hope these help you find a recipe you like!!

I have just served the one posted by Swan, except that I OS'ed by using raw potatoes and made my own chicken"soup" by using stock and cream and the visiting family have given it 10+ out of 10 - Dead easy to do and open to all kinds of adaptions, the next one will have Corned Beef in it, then mushrooms and peppers I think.

    Well done for finding it..

Tried Swan's recipee too as above, with raw grated potatoes and a mix of edam and mild cheddar. Worked great!! I would suggest cooking time may be about an hour or use a softer potato variety, for best results.
Use a tin of Campbells cond. soup, but don't add any water!
