tbh when I read the recipe I didn't like the sound of it much, but after these recommendations I'm definitely going to have to try it out :)

once I get a working oven again that is
I finally got my cooker connected up last week :D

tried out the hashbrown casserole & it was a great success, although I only used half the salt suggested & next time I think I'd use less butter. also I used Lidl's rostis because they're cheaper than hashbrowns

everyone loved it & wanted seconds (should have made a double quantity) so I'm looking forward to trying out some of the variations suggested above, with grilled tomatoes & scrambled egg on the side next time :)

www.justslowcooking.com has recipes for cooking hash brown casserole in the slow cooker :D Type "hash brown" into the search box. I haven't tried it myself but with all that processed food, I definitely wouldn't add salt.

I'll definitely give the slow cooking method a try too, wish I'd known about that before!

know what you mean about the salt ... tbh although it tasted great, it was still a bit too salty for me with just the half quantity I used, the others found it fine though. I think I'll try Mr Proctalgia's idea of using grated potatoes (maybe par-boil them first) & stock & cream instead of the processed ingredients
