Christmas Baking

I always do a homemade xmas dinner but I always struggle on the pud.
My trifle is usually box bought and I wouldnt know where to start on the pud and cake.
Any fool proof recipes out there?

Also we should start a collection of recipes for christmas treats....

    i make my christmas cake form Delia's Online recipe! Last year i made one in Nov, fed it with whiskey for a few weeks and i was going to marzipan and ice it as a present for a friend. I didn't get round to doing that or giving it to her til March, and she said it was fab!! it had matured and kept moist all that time in the tin!

    I have made Delia and Nigellas christmas pud and it is very easy and tastes out of this world, well worth doing and I usually do it in November and store it until xmas

  • i've noticed this year a lot of supermarkets are selling massive pannetonne in presentation boxes with handles etc. Seems to be really fashionable at the moment, and I think it's quite nice to borrow something traditionally Italian for xmas, as normally the festive season is overwhelmingly British (no complaints about that, but it adds a nice bit of variety).

    I know these are meant to last about a year in the cupboard so they might be good for making in advance - no idea how though, as it's somewhere between bread and cake.

    when do you do it in november and is it possible to make it earlier than that? I'd really like to have a go at making the delia one and have no patience with waiting!!!:j

    you can make the cake in august if you want to! it keeps well and you just need to feed it once a week with a table spoon of booze. :D The feeding makes it rich and matures the flavour.

    Make sure that you wrap the cake in grease proof paper while you are storing it in the tin.


    nb. to feed the cake, !!!!! it over the top with a skewer to about half the depth of the cake, and then drizzle the alcohol over the cake so it soaks in the holes.

    Im going to make the delia one, it'll be my first year and i'll be making it in the next couple of weeks thenb 'feed' it up until xmas, the earlier you make them the better it tastes i've been told as it can mature
