    I like a really boozy christmas cake! So I soak my mixed fruit in cointreau for a few days, I am sure whiskey and Brandy would work equally as well. When it is soaked the fruit is lovely and plump and find I only have to 'feed' the cake occasionaly as it stays really moist from the fruit soaking.

  • i make my christmas cake form Delia's Online recipe! Last year i made one in Nov, fed it with whiskey for a few weeks and i was going to marzipan and ice it as a present for a friend. I didn't get round to doing that or giving it to her til March, and she said it was fab!! it had matured and kept moist all that time in the tin!


    Made mine a few weeks ago (never done one so early).Got fruit soaking in brandy ready to bake another one tomorrow.

    if it helps, there's one here that i do almost every year (the years i don't, its cos we've one left over from the previous year). very easy to do, and cos i've made it so often, i can answer questions about it if necessary. It can be steamed the regular way, in a pressure cooker or in a slow cooker. Feel free to either pm me here or on the blog, or even via the contact form, and i'll try to help!

  • check out the free leaflets that Sainsburys are doing on their cake ingredients section as there is a fab one for xmas cake. there is also a coupon for money off sugar.....

    Thats great, but i dont have a microwave lol (threw it out) or a pressure cooker
    i do have a steamer and a slow cooker though
