Hi there  I'm doing the Storecupboard Challenge, so using bits from my pantry and freezer
I've highlighted in my plan the things I'm using up
DH is away for the week to China on Sunday, so it's an ideal opportunity for the three of us to mix and match small portions from the freezer (things that don't stretch to 4 of us
).
Thursday - pasta and pesto
Friday - pizza and garlic doughballs
Saturday - chicken and sweetcorn soup (made with HM chicken stock) with HM bread, cheese and chutneys
Sunday - bread and soup as Saturday;
mutton tagine with apricot and sultana couscous (based on recipes here and here); damson and apple crisp (made with breadcrumbs)
Monday - something made with nutty vegetables
Tuesday - prawn and cream pasta
Wednesday - rissoles, potatoes, salad
I've taken a sponge cake from the freezer and decorated it with icing and star sugar sprinkles. I've found some mince pies in the freezer - they're ready from frozen in 5 minutes in the Rayburn. I have loads of apples in the garden, so an making apple braids and an apple pie.
Have a good week, Penny. x:rudolf: Sheep, pigs, hens and bees on our Teesdale smallholding :rudolf:0 -

Gah, I'm late. Last night was really busy but here goes!
Thursday (just gone): pizza with chip shop chips
Friday: something (I have no idea what) from the freezer/cupboards. I was expecting to be on my own and to have risotto, but that plans out of the window!
Saturday: Lasagne (+4 for freezer)
Sunday: Out for tea
Monday: Fish with Potatoes
Tuesday: Probably at Mum's
Wednesday: Jambalaya D'Angelnikki
Thursday: Shepherd's Pie and other veg
Lunches will be sandwiches as always, and I plan on doing some baking this weekend to supplement that (flapjacks or cereal bars, and perhaps some fairy cakes). Have a good week everyone, and all the best!

Can you tell me how you make your vegetarian cottage pie and parsnip mash please?
Hi 10past6, it's Waitrose vegetarian cottage pie with parsnip and apple mash from their October recipe cards. As it's the first time we're cooking it we're playing it safe and doing parsnip and potato mash instead. When I say 'we' I mean dp as actually he does the cooking"We have to be kind because everyone is fighting a great, great battle" - Sir Richard Attenborough
