I found a recipe in my Jamie Oliver book today. I sliced some carrot, leek and onion and split them between two large foil sheets. I didn't have fresh herbs so used some Herbes de Provence instead, sprinkled over the veg, the shankis, I rubbed with olive oil and covered them with fresh black pepper and sea salt then I plonked them onto the veg (bone upwards) I wrapped the foil around the veg and the shank - poured in half a glass of white wine and a smidge of butter- I covered the shank with more foil and shoved them in the oven on 200 degrees for 2.5 hrs - they were absolutely divine. Plus, I am so pleased because I have never cooked shanks before.0 -

I've bought some lamb shanks already marinaded in a redcurrant and mint sauce - but have no idea how or how long to cook?!!?#

I'm assuming you got them from a supermarket, if so follow instructions. If not the best way to cook lamb shanks is slowly at least 21/2 hrs. What I would suggest is get a peice of tinfoil big enough to wrap lamb shanks, slice an onion and carrot and put on base of tinfoil. sit lamb shanks on this and wrap up.bake slowly 140 degrees for at least 3hrs. should taste great!!0

I did get them from a supermarket but either the cooking instructions etc have been thrown away or lost - hence the reason for asking!! lol

Hi rosiedee,
Lamb shanks are best cooked slowly. If you have a slow cooker it's ideal. I like to brown them first and then cook them in a casserole with garlic, rosemary some chopped onion and tinned tomatoes.
There's an earlier thread with recipes and ideas that should help so I've added your thread to it to keep all the suggestions together.

I brown the lamb shanks in butter/olive oil, remove to casserole dish. Then brown sliced leeks, sliced carrot and cubed parsnip in same fat (you can add some cubed potato too). Add stock (usually use beef cube) and couple of tbs of worcestershire sauce plus few sprigs of thyme (or dried). Then cook slowly for 2.5 hours. Delicioso as Dora would say!
P.S. I have used this same method for lamb steaks which I picked up reduced the other day but an hour's cooking is fine for these.
PPS. Would love to hear about any sources of cheapish lamb shanks AND does anyone know where to get reasonably priced cornflour? Asda own brand (26p) seems to have disappeared to be replaced by very expensive branded stuff!0 -

Tesco do their own brand cornflour...39p for 250g or 73p for 500g. Not as cheap as Asda, but better than the branded ones.
