Hi,
I know there is a nice easy way of making mushroom soup, but the problem is I just dont know how ??? Can anyone point me in the right way ??
I'm planning on making it tomorrow morning, so any help would be great.
I'm still kind of new to all this, thank you all !!!

I made mushroom soup for the first time a few weeks ago and was really happy with it. I started off just bringing some veg stock to the boil and adding a box of mushrooms and seasoning, let it simmer for a couple of hours adding more water if required and then blending it. It was delicious.My Doctor told me that "1 out of 3 people who start smoking will eventually die." The other two apparently became immortal.

I'd saute my mushrooms in butter with a little onion and garlic - cover with stock (home made is best) taste and season and simmer for about 20 minutes. Puree and add a little more stock if required. You can add a swirl of cream when serving.0

Me too tastes fab, also found that if you soak some of the dried mushrooms (the packs of fancy ones like !!!!ake etc) and soak them in hot water they make a nice addition too and the water you soak them in goes in as some of the stock. (only add these when im feeling flush though!)0

Saute onions and mushrooms in butter, sprinkle with flour and salt and pepper, cook for a bit longer. Remove 1/3 - 1/2 of the mixture. Put this in a liquidizer/blender with stock and whizz until smooth. Gradually sir back into the mixture in the pan, and slowly heat until thickened. If you want it richer, either replace half of the stock with milk, or add some cream right at the end, or stirred into the bowl when serving. Sprinkle with parsley if desired.

I knew I could rely on someone on here to have a fab recipe. I had been looking at this box of manky mushrooms and thought Id chuck them, they were ok, just didnt look nice but certainly not off or anything. Just made this soup and its the nicest thing I have had in ages. Really tasty, filling and hearty. To think I was going to chuck 'em in the bin eh?
