Sausage casserole recipe (merged)

My family love sausage casserole but until recently I always used a packed sauce mix or jar of sauce to make it with.

Does anyone have a "made from scratch" recipe that I can use please?

    Somebody else posted this recipe on here but I can't find it to link it so I'll quote it (I have it saved on Word), sorry to whoever posted it for not acknowledging you but thanks for the recipe, I use it quite often :-*
    Sausage & apple "casserole"

    You need:
    Sausages - Any type. Whatever your favourites are/what's on BOGOF
    Apples - Any. I use Braeburns or Coxs. Allow 1/2 to 1 apple per person, cut into wedges.
    Onion - red or white. Again cut into wedges & allow 1/2 onion-ish per person
    Chicken oxo made up into about 2 pints with big spoonful of wholegrain mustard & another of cranberry sauce stirred into it. Looks vile.

    Use big/deep frying pan or casserole dish for this.

    Fry off the sausages. When nearly cooked add the onion wedges, then the apple wedges. Allow to cook for about 5 minutes then pour the stock/mustard/cranberry mix over the top. Let it cook til the stock reduces down to a nice sticky gravy.

    It really does look and sound vile but it is yummy.

    Success guaranteed sausage casserole:

    You will need:

    Sausages, onions, carrots, celery, paprika, baked beans, potatoes, stock cubes, oil. Leftover red wine also useful if you have any (hehehehe...).

    Pierce sausages all over then grill to lose some of the fat. Chop them in quarters.

    Roughly chop all the veg (for casserole it is nice to have chunky bits), for a pack of sausages I use 2 onions, 2 carrots, 2 sticks of celery and 2 large potatoes.

    Sautee onions in some oil and when golden add some paprika, let it fry for a few seconds. Add chopped veg and sausages and stir.

    Crumble a couple of stock cubes into casserole. Add a drop of water if the mix is starting burning a bit! If you like salty food you need to add more stock cube or salt, to taste.

    Now, if you have the red wine this is the moment to put it in: put fire at its highest and then add wine, stir and let evaporate. If you have no red wine, or you prefer drinking it rather than wasting it into a casserole, omit this step.

    Add 1 tin of baked beans, rinse the tin with half tinful of hot water to get all the sauce out and put the water in the casserole.

    Simmer the whole thing for 1 hour or so, stirring often and adding hot water if needed.

    Buon appetito! All my clients swear by my sausage casserole so it must be good (I have never tasted it cos I'm vegetarian).

    I usually make stuff from scratch, but there are a couple of dishes I use jars cos the kids like them - this being one. What I need are recipes to replace the Chicken Tonight creamy mushroom and one for Tuna Pasta Bake. Anyone?

    Tuna Pasta bake

    1 185gm tin tuna,drained.
    1 440gm tin plum tomatos
    1-2 tsps mixed herbs
    1 small onion (finely chopped)
    1 500gm packet of pasta

    Mix tuna,tomatos,herbs and onions in a pan and bring to the boil then let simmer for 15-20 mins.
    Serve with pasta.

    To make it really nice you can sprinkle some cheese and some crushed plain crisps over the top and pop it under the grill until it's melted

    Does anyone has a tuna sweetcorn pasta bake (which doesn't involve tomatoes)? I'm trying to find a replacement for the Colemans (?) paket one (which is gorgeous, but pricey)

    I don't know the taste of the Chicken Tonight but I would give it a try to make the sauce like this:

    Fry chopped mushrooms in a bit of oil, then add a few spoonfuls of cream cheese and let it melt with the mushrooms, prob. need to add a tbsp of milk to thin it a bit, then salt and spice it to flavour.

    I have a fab chicken with creamy mushroom recipe that I use for clients but it is a little more complicated than the above (not much though, and it is a quick way to cook a dish to impress guests):

    You need: chicken (breast is best ;D as I always say to my mums hehehehehe!!!), mushrooms, butter, oil, onion, white wine (if you have any leftover that is - but in this case it matters more than with the sausage casserole, as it flavours the sauce distinctly!), double cream.

    Chop onions, mushrooms and chicken.

    Fry chicken until brown in a couple spoonfuls oil and then remove from pan.

    Heat some more oil and a chunk of butter until sizzling hot (careful as butter burns quickly though) and add onions - fry until golden then add mushrooms - let fry until soft. Add chicken.

    Stir and then put fire high. Add wine, simmer until evaporated.

    Lower flame to a simmer and add half a cupful of cream, stir gently and let it warm up but DO NOT boil it otherwise it can curdle. Add salt and pepper to taste.

    Buon appetito!

    easy peasy one if 2 tins of baked beans, sausages, in a dish, cover and bake for 1 hourish. kids love it. ;D
  • Anything italian style or tomato based seems good, so does mustard.

    i modified this and made it with pork mince into meatblls and it was wonderful. yum yum. I am a total sausage casserole freak so this is high praise from this quadrant :) most delicious

    its not aking from scratch but tinned mushroom soup is quite a good sauce. I often use cuppa soup made with milk for a sauce base too. mushrooms fried with onions and then chicken breast added with a mushroom cuppa soup (not the kind with croutins!)and milk poured over and simmered to thicken is a pretty good meal served with pasta. would probably work with tuna too.
