You could try this: - Easy and Delicious!!!!!! (I suggest you try half qty as if you do a big one as below you will eat it!!:drool: )
Baked Lemon Cheesecake
Ingredients
Base:
8 oz (250g) digestive biscuits, crushed
4 oz (125g) butter/margarine melted
4 oz (125g) sugar
Filling:
1 lb 4 oz cream cheese and/or curd cheese
2 lemons zest and juice
2 eggs
2 oz raisins
3 oz sugar
¼ pt double cream (or milk)
Method
1. Preheat oven to 160°C/ Gas Mark 4
2. In large bowl mix together crushed biscuits, melted butter and sugar and spread onto base of tin (line base with baking parchment for easier removal & serving.)
3. In another bowl, place cream cheese and beat until smooth.
4. Add the cream, eggs and sugar and whisk.
5. Pour in lemon juice, zest and raisins and mix well.
6. Pour onto biscuit base, level and bake in oven for 35 – 40 mins or until feels set.
7. Chill, preferably overnight to allow flavour to develop. Can finish off with thin layer of soured cream on top if liked.
8. Enjoy!

put it in mash, makes lovely creamy mash. Especially if you use one of the flavoured ones, yummy!0

Buy a pack of smoked salmon trimmings and mash the salmon (with a fork) in the cream cheese with a bit of lemon juice. Great sandwich filler or on blinis for the posh nibble to impress!!!I lost my job as a cricket commentator for saying “I don’t want to bore you with the details”.Milton Jones0

sorry couldn't get back to you sooner - never tried freezing as never any leftover long enough!!
Don't see why shouldn't though! Is cooked so should be stable - will try next time we make some and let you know.
Gotta dash - DD2 having friend to lunch and gotta make the pizza bases!

Other than spreading it onto bread, toast etc what else is it good for? recipes?0 -
Mix it with chives and use it to top jacket potato or give it to me so I can have it with the smoked salmon that's lurking in my freezer!0
