Meal Plans w/b 30/6/12

Hi everyone.
I have just joined the GC and with both DH and I sadly being on benefits and not being able to find jobs I am knuckling down to serious meal planning.
Breakfasts are always cereal and/or toast. I need cheap inspiration for that, I adore yoghurt and berries but find the berries can be costly, maybe I need to buy frozen? Guess yoghurt and berries then doubles up as a nice sweet snack when you need the sugar hit!
Sat 30 June - Pork chops, peas and mash with gravy. The chops were only £2 for 4 from Sainsbobs but due to them being small we needed to use them all and they weren't particularly tasty. Maybe I am spoilt as I used to always get chops from the butcher?
Sun 1 July - Chicken roast dinner, carrots, sweet potato, roast potatoes, cabbage and peas. There is enough chicken left to make probably two pies plus give DS (2 yo and usually eats before DH and I since we like to eat once he is in bed) two meals.
Mon 2 July - Sausage casserole which DH will do. Got 2 packets of the mid range Sainsbobs sausage for £2, will use all of them so should have plenty to freeze too! :money:
Tue 3 July - HM Chicken pie (though bought the puff pastry!) and some sort of potato, mash if DH is in the mood, if not maybe HM chips.
Wed 4 July - Cottage pie, again should be enough to double up and freeze.
Thur 5 July - Thai green chicken curry
Fri 6 July - No idea yet. Will be getting SM delivery on Thursday.0 -
Boodle, please could you let me know where you find your slow cooker recipes? I'm veggie and would love to use my slow cooker more, but have trouble finding inspiration! Your meal plan sounds lovely

Other people's always look more interesting than our own, don't they?I'm just trying to use the slow cooker more so I just plan with that in mind and do anything that can be slow-cooked in there. So everything is pretty much the same as I would cook it in a pan but bunged in at once (I never pre-cook anything!): the thai curry is curry paste, coconut milk (made from a block) soy sauce and veggies; the cottage pie is just red lentils, tin of tomatoes, veg, some yeast extract and whatever herbs we fancy, topped with mash or thickly sliced potatoes depending on how lazy I am; the pacific pie is just dried soya flakes, a sheesy sauce (blitzed sheese + soya milk), nori, probs smoked paprika + a little tomato puree, veggies, + topped with pots again. Hope that helps

We're having quite a porky meal plan this week:
Sun: Roast loin of pork, roast pots, veg & gravy. LO Raspberry tagine
Mon: LO pork, mash & beans. Rice pudding
Tues: Sweet & sour pork (using last of LO pork) Strawberries & yog
Wed: Pasta carbonara. probably won't have pud as find pasta v.filling
Thurs: Lamb tagine & rice. Jelly & fruit
Fri: Singapore noodles. Strawberries & yog
Sat: Fish pie. Banana custard
Have put in puds for most days but don't always have them. Mainly depends whether DH wants something after dinner.

I'd love to use mine more so that I haven't got lots of prep to do in the evening (I'm more of a morning person).
With the slices of potato, do you add them uncooked to the slow cooker at the beginning of it, and do they have to be covered in the liquid, or do they cook from the steam produced?? Yes I just add them in and layer across the top. Some sink a bit but it doesn't matter. I got about two layers (we had the lentil dish last night instead of curry.) The ones untouched by liquid still get cooked. It isn't stupid either, I didn't know until I tried it and the first time gave the tops ones a trepidous prod at the end, half expecting them to be rock hardLove and compassion to all x0 -
Changed mine around a bit now due to going for a cheapy carvery yesterday meaning we didn't want a big tea - just had salad and HM bread,
Tuesday: Thai red curry with coconut rice
Wednesday: Pasta & salad or curry if there are leftovers
Thursday: Stir fry to use any leftover veg
Friday: Pizza night
Saturday: Off to a wedding so shouldn't need any meals at home except breakfast
Sunday: OH is having pork and sausage casserole from the Spanish book, I may make another mung bean cottage pie for me to take to work and have a portion of that for tea.

Change of plan for tonight. Having some carrot & coriander soup to start as have found some carrots lurking in the fridge which could do with using up.
So tonight will be a starter and main rather than main and pud. Although I've still got strawberries if DH or I fancy them later in the evening.

Hi everyone
Working on what needs using up, what reduced bits we have stashed in the freezer and who'll be cooking on given days, here's what we'll be filling our faces with this week -
Tues: chicken pie, potatoes, peas and carrots
Weds: spaghetti bolognese, garlic bread
Thurs: aubergine and chickpea salad, salmon fillets, cous cous
Fri: homemade burgers, homemade wedges, salad
will need to get a red onion and burger buns at some point but thats it. Everything else we already have.0
