I'm not saying there is no place for recipe books -far from it, I love 'em:D but I love using them for inspiration rather than as a set of instructions.
Obviously you can't substitute a tin of sardines for strawberries, or marmite for chocolate:rotfl: And you do have to be careful with cake recipes, but even those are open to adaptation -adding nuts, different kinds of dried fruit, frash fruit etc, just don't tinker with the basic batter mixture. Use your common sense and improvise -it is much more economical;)0 -

I try not to use dried herbs (unless the recipe calls for dried) as I think fresh taste so much better.
However I do use frozen & fresh-in-a-tube herbs, as fresh are very expensive & wasteful.0 -

I think it's a case of, it's been written by a 'professional' so they MUST know which ingredients/flavours work best together
Whereas if I am making a meal with no recipe book, I am the one who is in charge. I can't make the meal worse/different/fail because there is nothing to judge it against iyswim:rolleyes:
I am getting better at changing 'written recipes' to my own adaptation, although that is usually because I never seem to have the correct ingredients so have to decide what to sub it with:rotfl:Unless someone like you cares a whole awful lot,

That meatball recipe sounds delicious-what book is it from? I may have it, if not could you post the recipe?
This is my adaptation of it. It served 5 of us generously. It's an excellent way of making 1lb of sausages serve a hungry family. Make it in a flameproof casserole.
Skin 1lb of sausages (obviously use sausagemeat if it is cheaper, I had bangers in my freezer), and make them into ping pong ball sized balls.
Cut up 5 rashers of bacon (I use smoked streaky)
Fry sausage balls and bacon till the balls are brown and crusty and the bacon crisp. Remove them to a plate while you fry a chopped onion, a couple of cloves of garlic, a couple of chopped celery sticks and a diced carrot. I have this sort of mixture ready chopped in tubs in the freezer, it's a great timesaver.
Add about 8oz of barley or farro, stir around to coat in the fat (use whatever fat you prefer).
Add 2 dollops of tomato puree and about a litre of stock. Return the sausage balls and bacon to the pot. Bring to the boil, then turn down to a simmer and cook for about 30 mins until the barley/farro is tender.
Just before serving stir in 1 tbsp Dijon mustard and 1 tbsp cider vinegar. Cheak seasoning -mine didn't need any salt because of the bacon and sausages.
Serve in bowls with bread. It is supposed to be soupy;)0 -
Another one people don't consider is giving their children an apple or banana to eat on the way round, particularly if it should have been weighed as opposed to out of a multi-pack.
That used to annoy me when I worked on checkouts. They'd say, "oh, Timmy had one of the apples" or give me an empty banana skin. So what I did was weigh the rest of the apples/bananas, then take a single one and weigh that seperately.0 -

my brownie cookies have spread on the tray into one big mess...useless recipe ive been baking since i was a kid and this has never happened before anyone any ideas i have half the mixture stil in a bowl to be used.
My son made these and they turned out ok. However he wisked the eggs, coffee and sugar for a good ten minutes until they were very thick..like you do for fatless sponge. We making them without coffee and with milk choccy this time.I must not fear. Fear is the mind-killer.

I worked for a leading supermarket & looked around for various options rather than binning food. Unfortunately there were none & even those who were accessable at a push were not interested.
It also needs to be said that customers can be their own worst enemies too. Very often items that should be chilled or frozen were dumped behind boxes of soap powder & such so there is no option than to destroy it. Stores have no control over how the food is handled once it has left the shelves & all this has to be factored into wastage & of course bumps up prices.

I know it is so tempting to keep picking at the grapes, but please remember that the staff do prefer to be paid at the end of the month, rather than given redundancy notice because the firm has gone bankrupt. To you it is a single peach @ 30p, but if you look at how many customers are in the store at the precise time you are there, multiply that by 8 for a 24hr opening & again by 6 for the days in a week......That used to annoy me when I worked on checkouts. I really can't see why people should help themselves in that way to stuff as they go around the store! :eek: I've never let DD help herself to food or drink before we've paid for it! As far as I'm concerned until I've handed over the cash it still belongs to the store we're in so I have no right to consume it! I think the only time I've used something before I've paid for it was when DD took a huge sneezing fit in the middle of Mr A's and needed to blow her nose but I didn't have any tissues with me (they were on my shopping list) so I bought a multipack of pocket ones and let her use a couple. When I got to the till they had no problem with it.I'd never do it with food!
