Cheap veggie comfort food?

Ah good friend of mine has just broken up with her partner of 7 years.
She is moving out next month, but is going to be hopping around with friends over the next few weeks. She's staying with us from Saturday onwards, but we go on holiday next Tuesday so she'll be house-sitting for us from then on.
So I want to make some nice veggie comfort food for Sunday afternoon and Monday night that we can all eat, that is cheap, filling and most of all stays away from the Quorn or meat replacement stuff.
I was thinking of doing a roast on Sunday, so what can I do that makes it veggie (I'd rather we all eat veggie than cooking a joint especially for us and then serving her some fake sausages or something).
What stuff makes good substitute for meat in everyday dishes (like, cottage piece, lasagne, stuff that is easy to make a big meal out of.)
Any help appreciated.

How about something like nut loaf? I sometimes serve it with rice and sweet'n'sour sauce, and other times put steamed potatoes and carrots with it, it's very versatile.If your dog thinks you're the best, don't seek a second opinion.;)0

Falafels in wraps is also lovely for lunch - tasty, cheap and relatively healthy with plenty of salad in the wraps.
For a veggie roast I'd make a nut or lentil loaf.0 -
Don't forget to avoid meat stock (cubes) in the gravy if you're making a veggie roast.0

My go to dish for visiting veggies that we also love is this one. Parmigiana Melanzana. (see my username!!)

You can omit the white wine vinegar, cut down on the parmesan and use more breadcrumbs to economise.
I can tell you it is so moreish and delicious. I serve it with baby new potatoes and salad of choice. If I don't do spuds I put out slices of ciabbata or other rustic type bread, to mop up the delicious juice.
The spuds are not really necessary, as the dish itself is filling, but hey, at this time of year, is there anything nicer than a bowl of new spuds with butter and sea salt. No there isn't!!

My daughter is a vegetarian and I do a full roast dinner for her with yorkshire puddings and vegetarian gravy made from vegetable stock and flour, she doesn't miss the meat. In fact every so often I do this for all of us.
Make a HM pizza using vegetarian cheese which isn't that expensive and top with peppers, olives, mushrooms and red onion.
My daughter still eats eggs and loves my HM quiche with peppers, mushrooms and red onions.

Walnut whips are suitable for vegetarians as they don't us animal setting agents, my daughter was over the moon when she discovered this :rotfl::rotfl:

Instead of a roast, have a giant yorkshire pudding filled with assorted roast/boiled veg and some stuffing. Less effort/stress than trying to get your first nut roast right.0

As a veggie I don't tend to make 'roasts much as there is so much other lovely stuff to eat but when I have to have something to go with roast spuds, gravy etc, I make a lentil, carrot and cheese bake which is lovely.
It's basically red lentils cooked down, breadcrumbs, herbs, beaten egg, grated carrot and cheddar stirred in and cooked on hob for a bit and them baked about 30 mins until going brown."'Cause it's a bittersweet symphony, this life

defo a good nut roast. as long as it's well flavoured you cant lose. and loads of veg and gravy.
