Cheap veggie comfort food?

    How about a nice pie? My favourite I make is from an old veggie student cookbook. You use root veggies like parsnips and carrots and make the gravy out of tinned tomatoes, mushrooms and red wine cooked together. I put them in a casserole dish with a puff pastry lid on top (jusrol is veggie friendly) egg wash then bake until until the pastry is risen and a nice colour. Then just serve with the roast veggies.

    Oh wow, so many tasty recipes I think we'll be eating veggie for a while now!

    I love the idea of the pie, BF will like that. I do really have a craving for roast though (parsnips and potatoes YUM) so I'm thinking the giant yorkshire pudding filled with veggie gravy, potatoes and cabbage etc would go down a treat.

    And then I'm definitely thinking some sort of bean casserole would be yummy.

  • What about a curry?

    My favourite is pepper, frozen beens, maybe some tomatos and then coconut milk and curry paste, I often stretch the coconut milk with "normal" milk since one can isn't enough and two cans are too much...

    Or a vegetarian shepherds pie with lentils instead of mince?

    Here's a thought, serve her meat, your the veggie by the sounds of it! LOL

    I know its a bit obvious but a nice risotto primevera is lovely at this time of year.
    I always yearn for a slightly stodgey risotto when I want comfort food.
    Just a courgette , some frozen peas & a bit of whatever other green veg (English asparagus if I can afford it when its cheaper when its in season)

    You can omit the white wine vinegar, cut down on the parmesan and use more breadcrumbs to economise.

    I can tell you it is so moreish and delicious. I serve it with baby new potatoes and salad of choice. If I don't do spuds I put out slices of ciabbata or other rustic type bread, to mop up the delicious juice.

    The spuds are not really necessary, as the dish itself is filling, but hey, at this time of year, is there anything nicer than a bowl of new spuds with butter and sea salt. No there isn't!!

    Enjoy.

    For real vegetarians you'll need to sub the Parmesan cheese for a vegetarian alternative, Parmesan is one of those foods that by law have to be made with traditional ingredients. In this case rennet from a calf's stomach.

    We find a shepherds pie type dish goes down well, something like this, but I'd add a tin of pulses like black eyed beans or some frozen mince alternative stuff like Meet the Alternative readily available at supermarkets http://ohsheglows.com/2011/03/17/vegan-shepherds-pie-with-gravy//

  • I changed a vegsoc recipe and made some lovely veggie burgers. Recipe is on my blog the address to which is in my profile. The 5th July has the veggie burger recipe and they were really easy and yummy

    I know she's not a fan of the meat replacement stuff and I feel it would be silly to buy some expensive 'fake meat' when me and my partner could happily enjoy some wholesome food instead. We're OK without eating meat.

    Veggie fake meat is made from soya, a lot of people have trouble with soya products, my DD does, that is why I rarely buy it, it is way too expensive anyway. Plus the fact that nearly all soya products are GMO should have you staying away from it
