I'm a veggie and love nothing more than good spicy fajitas - onions peppers, mushrooms and anything else you want to chuck in. I do cheat and buy a seasoning sachet though. Add some grated cheese, salsa and sour cream and I'm in food heaven !

You should ask your friend what they don't like. I am not vegetarian, but most of my food is meat free - and there's a lot of stuff on this thread that I'd not like/want to eat at all. e.g. mushrooms, aubergines, stilton ....

No point making something for them to say "Oh, I can't eat that!"

No not sure actually thanks for pointing that out - I dont eat meat but am not a true veggie so sometimes forget that bit altogether.

OP - do not feed your friend any ordinary cheese without checking first!

Yesterday I made this baked bean lasagne:

    It was lovely. .

Do you think this would freeze OK ? I fancy trying it, but I normally portion up a lasagne in those take-away boxes as I live alone and a big one would be too much at one go

Veggie fake meat is made from soya, a lot of people have trouble with soya products, my DD does, that is why I rarely buy it, it is way too expensive anyway. Plus the fact that nearly all soya products are GMO should have you staying away from it

Is genetically modified food bad? I thought it just meant that some scientist had done something to make it grow quicker or better?

I just did some research on soya and it says its ok as part of a healthy balanced diet, which is pretty much the same for all foods isn't it?

I am only interested because i know a veggie and they say things like 'quorn is really good for you' 'it's ok to eat fish they don't remember anything' :D

The only thing I thought might be a bit dodgy would be the baked beans but I freeze other beans without a problem so certainly worth giving it a go.

We actually froze and reheated it and it was great! I personally prefer reheated lasagne to fresh but I might just be strange ;)

Brilliant I shall make one over the weekend hopefully and portion it up.I fancy 'livening up' the beans with some chilli and maybe chucking in a few mushrooms as well I love veggie curry, and throw almost anything in thet :):):) and really its similar only using pasta & beans instead of rice.

Some meat replacements are not soya but Quorn which is a fungus based product. Quorn is well known for causing upset stomachs quite frequently.
