    The Ashoka in Kirkintilloch didnt ever give any tips to any staff whether given by card or in cash. All tips went to the manager. That's what happened when my daughter was a waitress there.

    Not quite. If the tip is passed directly to the employee its only subject to income tax. If all the tips go into a pot & then divied out between all the staff, it then becomes subject to NI. Once it becomes subject to NI, theres then the employer contribution so the likelyhood is that the employer cont will also come from the tips (which from a buiness point of view is justifiable) meaning the employee effectively pays more than double NI.

    I, until very recently, worked at a Beefeater chain as a waitress, and my partner still works there. All tips, cash or card, remain with the individual waiter/waitress. This is excepting Christmas Day, when all tips are shared between all staff, except managers. This sort of arrangement sadly seems to be phasing out as big companies try to cash in on individuals’ hard work. I turned down a waitressing job at Turtle Bay because I was told that the company would take a percentage of my tips every month. I thought it insulting, and was so glad I went to the Beefeater instead.

    I work for Hilton. All tips - card or cash are being shared with absolutely everyone including management. You can work your butt off but tips you get from the customer as a gratitude for your great service is something you will never ever see. Customers are not aware that what they pay to you for carying for them and making their experiance extra special will actually never get to you! No matter how well you did!
    Once we had a disabled guy working for us with one arm. He was tipped few times directly as customers felt he was 'An inspiration to others'. So out of £15 he got in that GOOD week he actually only received 40p in tips! And management keep on believing and telling themselves their system is FAIR!
    The truth is the working/service giving staff is annoyed and not motivated at all in doing well and in exceeding customers expectations. Why should they? If for busting their butt off (and legs) during every shift they get nothing from it or tiny amount as it is shared with everyone including management, with the person who loosely dries the glasses in the back or server for whom customer service is never a priority. Very thoughtful Hilton management... (or unfair and damaging if you put some thought into it..)

    I need to add that ALL cash tips are collected in 1 pot that disappears every day and is paid out a month later. Yes, you heard right - all tips for the service (earned by the staff that actually gives the service) received in August is not paid to us in August wages together with August hours.. The tips are spit amongst EVERYONE and paid a month later - i.e we see joke of a tips from the whole month of August on September's 25th pay date together with September hours..
    Again that is fair by the Hilton management standards.

    Work in small chain and tips given in our monthly pay. Owner is said to keep 20% for tax. Lucky if we see few £ per night when I feel I’ve been given really good tips as I do bills?

    I have worked for 2 large casino companies.

    Grosvenor - In the old days, bar staff used to keep their tips, that's what made the unsociable hours worthwhile. Now they have to combine them with all staff. Tips are amalgamated throughout the month and then added to your wages depending on hours worked etc. Head office and management even get a share of this.

    Genting - Bar staff keep their own tips. Gaming staff, in the same way as Grosvenor, have their tips added to to their salary at the end of the month. Head office and management are take a cut from this also.

    Is it fare that management and head office take a cut? Probably not, since as their salary is already higher to reflect their position. Tips are for service provided, the provider should feel the benefit of their appreciated efforts.

    Our daughter recently used to work in an Italian restaurant in our local village. Tips were a very gray area, much to our annoyance.
    No tips were allowed to be given to an individual to keep. If a customer wanted you to have the tip, it had to be given to you off the premises. All tips were pooled and than handed out in cash at the end of the week. There was a grading system - managers got the biggest cut and then it filtered down the chain as the jobs roles had less of an importance. You are totally relying on the person to work it out correctly. It was very much, if your face fits, we pay you well! Some weeks our daughter would work her socks off and receive £5 other weeks she’d receive £25. As I said previously it totally depended on the person sharing them out. While we’re on this subject, my other grievance was that boys were getting paid more than the girls for the same level of experience they had previously. Also more progression for men within the restaurant. All wrong in my mind.
