This year my bill was low around 220 I enquired and they said that I didn't have a my meter read since 2017. They came back with a bill for 600£. I don't know how they checked my house and no leaks.

The last bill was actually 220 but I enquired why it was low and they had to send someone to check and he came and said we never had meter read but affinity said we had and he installed new meter and they charged us nearly 585

Have you made sure you have no water running and then had a look at your meter to see if it's still or moving?

If it's moving then there is a leak somewhere.

If it's still, then keep checking the meter before/after a bath/shower, before/after doing washing, before/after washing up etc and make a note of the numbers.
Mortgage started 2020, aiming to clear it in 2026.
