Eggshells are porous, so they let air in slowly. When there's air, it goes off. Doesn't need to be salted water, plain water will do.Bulletproof0

YOu should be able to smell if it's off as soon as you break it.

Put it in water, and if it floats it's bad. Also you can tell how fresh an egg is by the white, if it's thick and stays together, it's fresh. The white gets thin and runny the older the egg. (Learnt that watching HOW)!!!!I Believe in saving money!!!:T

I tend to crack it in to a seperate cup before adding to a mixure, at least that way if it's off you haven't wasted everything.
