Me too! I use anything that seems reasonable, i.e. a half mix of demerara and white caster sugar, all white granulated, all brown sugar, usually whatever I have left in the bottom of the canisters. Although I agree with the previous posters, I think icing sugar would be too fine and would melt into a sticky mess.0 -
i made a coffee and walnut cake this afternoon and when i went to make some butter icing i realised i had no icing sugar.....
so i had a mad idea and put some normal granulated sugar into my blender and hey presto...... home made icing sugar which worked a treat.
i was so excited i even rang my mum.......... sad eh.

I am sure I have read somewhere that you can make caster sugar from ordinary sugar. Does this apply to icing sugar as well or is there something else added.
Does anyone do this and if so how?

castor sugar is ground, and icing sugar is really ground.You can do it in the food processor

When I ran out of icing sugar I put granulated sugar in the liquidiser attachment of my Kenwoood chef and wizzed up up until it was fine enough for butter icing. I remember in the 70s when there was a shortage of sugar / icing sugar etc, our cookery teacher at school just told us to bring in some sugar and she did just this in batches for us. Just don't overload the Kenwood / food processor etc.Enjoying an MSE OS life0
