How do you overwrite text on a scanned document?
I have tried to delete in Photoshop, but just make a mess of it.
All I want to do, is change a date on something.
Also copied to a word document, but cannot seem to achieve anything!!

This is actually quite hard to do if you want to make the change difficult to detect.
If I wanted to do this I would probably try to figure out what font and size were used in the original document and then create a document in Word with just the date text that you want to insert somewhere on the page. Print this out and then scan it. You should then be able to select an area of the temporary scanned image which contains the date text and paste it onto the original, replacing the actual date.
You may still have to work on the background colour if the paper that you print the temporary image on doesn't match the original.0
