Is it a whole duck? Roast it? Or what do you fancy.
You can roast and then add a sauce, you portion into four and cook in a caserol and you can caserol it whole in wine and apricots.

Duck breast portions are nice done in the slow cooker in red wine sauce.

Its great now the game seasons started. OH shoots and we get plenty of phesants, duck and partridge

Smother in hoisin or plum sauce, cook for 30 mins longer than recommended, on a rack over a deep baking tin... and you have Crispy Peking Duck! Shred and serve in small pancakes with a little more sauce, spring onion and cucumber cut into strips. Costs a fortune in a Chinese restaurant.

  • Cooking duck is WELL more complicated than that.

    Its one of my specialties.

Remember to Scar or !!!!!! the duck otherwise the Fat will stay inside the chicken resulting in a really wet bite... Duck is REALLY fatty and you have to score the skin side not TOO deep to release some fat.

Always cook duck in a COLD pan, i.e. it'll release ALOT of oil so you don't need to PRE OIL the pan before you cook it.

just had my duck and it was well worth it. did'nt have a rack to put it on either. pricked it all over so the fat came out, tsp salt rubbed into skin. cooked on gas 6 for just over 2 hrs.you have to keep straining the fat throughout cos there,s alot. the meat was really tasty.
