This is my first post so let's hope it goes well.
I have quite an addiction to buying veg so I have stacks ( a whole fridge full) and need to know how to preserve it ie to freeze Mushrooms, peppers - all sorts and swede and maybe parnsips. Can I just stick it in? What do I need to do.?
Freezer space is not a problem and I cant face anymore soup.

Mushrooms and peppers I just slie and freeze in a bag, probably same with parsnips though you might need to par-boil them first. Swede I'm not sure about sorry.0

One idea - I parboil chunks swede and parsnips and pack them in the freezer - then roast from frozen with a bit of oil, salt and herbs drizzled on - I find swede gets a bit watery if defrosted before you roast.0

Hi - swede works really well if you cook and mash it, then put into freezer bags and freeze. Get it out and defrost as and when and blip in the microwave. Saves loads of time and effort doing it in batches.

I blanche swede and then freeze and as ubamother says it roasts well from frozen. There are some suggestions here:
