Meringue Icing!

Does anyone know how to make meringue icing, a customer came in the shop and said she had just made some. she told me the method, bowl over simmering pan whisk egg whites and sugar 5mins til cooked then something a bout whizzing it in the machine! But i don't know the quantities and i've only made meringue once before and…

Does anyone else worry about the egg white being used raw and only cooked by virtue of the syrup being whisked in? (am thinking of salmonella) or am I thinking tooooooo much (again!)
