Meringue Icing!

Does anyone know how to make meringue icing, a customer came in the shop and said she had just made some.

she told me the method, bowl over simmering pan whisk egg whites and sugar 5mins til cooked then something a bout whizzing it in the machine! But i don't know the quantities and i've only made meringue once before and that turned out very odd!

I've scanned thru the collections and index but can't find anything! Help!:D

    thanks tanith :D ............the lady said that whisking them over the simmering pan was to cook them though :confused:

    This is a recipe for American Frosting that I've used on many occasions. The result is a crispy outer icing and a 'slightly marshmallowy texture' underneath.

    Ingredients

    1lb caster sugar
    4½fl oz water
    2 egg whites

    Method

    •Place the sugar in a large, heavy-based pan with the water and heat gently until the sugar has dissolved. This may take some time as there is a lot of sugar to a small amount of water.
    •Bring to the boil and boil till small bubbles are appearing.
    •Meanwhile, whisk the egg whites in a large deep bowl until stiff.
    •Allow the bubbles to settle, then slowly pour the hot syrup on to the egg whites, whisking constantly.
    •When all the sugar syrup has been added, continue whisking until the mixture stands in peaks.

    This can be used to sandwich the cakes, then spread the remainder over the top and sides, using a palette knife.
    Pull the frosting up into peaks all over.
    Work quickly as the icing sets rapidly.
    Leave to set in a cool place, but do not refrigerate!

    I have used it to sandwich and top a Walnut cake, pressing halved walnuts into the topping before it gets a chance to set properly.

    I found this before - they call it marshmallow icing. Just be very careful... I burnt mine, so can't say if it's good or not :o

    I can, however, vouch for the baileys icing :D
  • good luck i made this once and totally mucked it up did not melt the sugar enough adn it was all bitty - oops
