Now you've got me worried - one of the recipes I saw said allow it to dry (might take 2-3 days)... so... dry it in a very low oven...?

Yes, they will have to go in the oven. Um...
I decided to use my small oven, and put a whole bunch of taters in it to give them a good start as baked ones, plus a few bits of bread to dry for breadcrumbs.
Then promptly forgot about them! :eek:
So now I have a whole bunch of beautifully cooked potatoes, some bread "biscuits", and candied peel that is as hard as rowntrees fruit gums.
