does anyone have a recipe for manchester tart!. i used to have it at school many years ago,and i've looked in all my cookbooks, even gone to the library.
is there a recipe on here by any chance only i can't find one. some of you may not remember it, but it was my favourite pud. it,s pastry,jam filled then custard topped with coconut. it,s the custard bit i,m not sure about.

Serves 4
600ml (1 pint) Milk
110g (4oz) Shortcrust Pastry
3 tbsp Raspberry Jam
3 tbsp Custard Powder
2-3 tbsp Desiccated Coconut
2 tbsp Sugar
Pre-heat oven to 200°C; 400°F: Gas 6.
Roll out the dough and line a baking dish.
Blind bake (!!!!!! with fork and place a piece of greaseproof paper with some baking beans on pastry).
Bake for 15 minutes.
Allow to cool.
Spread the jam over the pastry base, sprinkle with coconut.
Boil the milk and whisk into the sugar and custard powder (follow manufacturers instructions).
Pour into the pastry case.
Sprinkle with coconut or a little sugar, to prevent a skin forming.
Allow to cool before serving.Liz xx0 -

My mum keeps talking about how she's gonna make a manchester tart but she's not sure about how to make it. Can anyone point me in the right direction of a recipe/instructions? It's pastry with custard, banana and jam in it with coconut flake things on the top.

My mum makes something that sounds very similar, although I never knew it had a proper name for it!
It's basically a sweet pastry case (baked blind) - half fat to flour plus 1oz sugar and an egg to bind - then spread a layer of jam over the bottom, slice up a couple of bananas and layer over the jam, then make a basic victoria sponge (4oz flour, sugar, butter and 2 eggs) and sprinkle sliced almonds over the top.
I should imagine it would take approx 20mins at gas 5 to cook? - but I can ask her for detailed recipe when I next see her if you like0
