Advice please? Quick fish dishes lasting a while

Hi all
Thanks for reading. I have a problem. A good friend of mine has returned from the South cos his dad has been taken into hospital (not looking good). There's no food in the house, its a dump, and my friend is understandably depressed, but this means he has no inclination to cook or feed himself.
So I plan to go down tomorrow, take him shopping, tidy up a bit and put some quick, easy meals in his fridge for during the week.
My problem is that my (very image conscious) friend only really eats fish, and I don't eat it at all (chicken or veg for me), and requested health, mediterranian style fish dishes with lots of veg.
Whilst I can think of a couple, I'm struggling 1) for inspiration and 2) for anything which will keep, as I gather fish needs to be cooked really fresh.
Any and all suggestions most gratefully received.

I'm no chef, but a quick Google comes up with quite a few ideas.
Some seem like they'd freeze ok so maybe that's the answer to maintaining freshness?

what about preparing the bases of a meal that you can use tinned fish like tuna, salmon, sardines, pilchards, im sure these are just as healthy if bought in brine or spring water.One day I will live in a cabin in the woods0

I did a lovely dish the other evening which was an experiment but turned out fabulous.
We have just bought a Remoska from Lakeland which I cooked it in, but this can be cooked in a big lidded pan on the hob.
I chopped up red yellow and green peppers, an onion, and about 8 ripe tomatoes, sliced a couple of cloves of garlic, threw in some fresh basil leaves, bit salt and course ground black pepper and put a couple of descaled seabass on the top (minus heads and tails) and just left it to cook. It was delicious and my niece who wont touch peppers or fish ate the lot. We used part baked bread finished off to mop up all the juices. I will certainly do it again.
Also do a fresh tuna and tomato stew, will see if I can find recipe
Found it and my chilli salmon tagliatelle
Fresh Tuna/Tomato stew
Fry chopped onion, chunk of root ginger and clove garlic til soft. Add approx 12 oz chopped fresh tomatoes (vine ones are better flavour) Add 1/2 tsp cumin and 2 tbsp chopped parsley. Cook approx 5 mins to soften tomatoes slightly> Add 1/2 pt fish stock boil then simmer 15 mins until soft and pulpy. Add 8oz fresh tuna cut into chunks. Cover and simmer 5 mins season to taste and serve with rice.
Chilli Salmon Tagliatelle
Put approx 14ox tagliatelle on to boil. Gently fry about 1lb salmon fillet 5 - 8 mins until it flakes. Heat tbsp oil and 2oz butter in pan and fry 1 large red chilli chopped and 3 cloves garlic finely chopped until soft but not brown.
Add drained pasta, flaked salmon and a bag of watercress to the pan. Toss together. Season and serve
