"SAUCE" recipe Board thread

My meals need some extra flavour without the extra cost.
If anyone knows of good cheap "sauce" recipes maybe we could all post them here.
The bottles of sweet and sour sauce cost more than £1 for a small bottle in the shops, this recipe makes a huge pan full ,for less than £1 (I freeze into batches) and serve with fish/chicken or pork.

SWEET AND SOUR SAUCE
1 SMALL CAN PINEAPPLE (DRAINED,KEEP THE JUICE)
1/2 CUP SUGAR
1 TIN CHOPPED TOMATOES (I use tesco value)
1/2 CUP WHITE VINEGAR
1 ONION
1 GREEN PEPPER
2 TBSP SOYA SAUCE
1/2 TSP GROUND GINGER POWDER
2 TBSP CORN STARCH

1: CHOP PINEAPPLE/ONION/GREEN PEPPER INTO SMALL PIECES.
2: IN SAUCEPAN PUT
SUGAR/TOMATOES/VINEGAR/ONION/PEPPER/S.SAUCE/GINGER & PINEAPPLE.
3: SIMMER FOR 20 MINS.
4: IN A BOWL MIX PINEAPPLE JUICE WITH THE CORNSTARCH & ADD TO PAN.
5: SIMMER FOR ANOTHER 15 MINS.

IT TASTES LOVELY!

    CREAMY HONEY MUSTARD SAUCE

    1 tablespoon wholegrain mustard
    1-2 tablespoons honey(to taste)
    1 cup of water
    1 cup of double cream

    Brown of chicken or pork. Remove meat and put to the side. Pour water into frying pan, add in honey and mustard. Return chicken or meat to frying pan. Reduce the liquid by half and add in cream, boil and reduce until nice and creamy. This can sometimes take a while depending on how much water was left in pan. Much better than shop bought.

    ANOTHER SWEET AND SOUR SAUCE
    1 onion
    1 carrot
    1 pepper

    Dice them up and fry in some veg oil until just cooked

    add
    2 tbs light soy
    6 tbs sugar
    6 tbs red wine vinegar
    2 tbs tomato puree
    8 tbs veg or chicken stock

    When boiling add 2 tbs cornstarch mixed with a little water until you get the required thickness.

    Use with fried pork or chicken or more veg, Add pinapple if you wish

    Or for a real authentic Hong Kong style meal

    Take 500-600g of chicken breast or tender pork loin, cut into fine strips.
    Mariniate in a little whiskey/ brandy for 20 mins

    Mix together 2 eggs with 4 tbs of flour with salt, pepper and garlic powder. Add the meat pieces and mix until each piece is well coated. Deep fry in oil until golden and drain on kitchen paper. ( You will have to break them appart when frying) Add these pieces to the cooked sauce and serve with rice.

    A bit of hard work but extremely tasty.

    My favourite home made stilton sauce for steak
    This sauce is great, quick to make and poured over a fine steak works wonders.

    Make up a white sauce. I have no recipee per se but put a large knob of butter in a pan melt and heat until just bubbling. Add a little flour and stir in until it makes a thick mixture, cook and stir constantly for a few mins (Dont let it burn).

    Take it off the heat. Gradually add a little milk, beating in a little at a time, when it is mixed well add a little more. You should end up with a thin white sauce. about 1/2 pint.

    Put back on the heat and warm slowly. Grate into this or crumble about 2 oz of mature stilton, a good shake of pepper, a little salt to taste and a sprinkle of garlic powder. Warm and cook until thick.
    Remove from the heat and add 1/4 pt of single cream. Stir and cook until smooth and creamy.
    Taste and adjust seasoning, pour over steak and eat.

    I have frozen it without cream, just add cream in once defrosted.
