are there any covers or insurances available against the threat of redundancy?

Yes there are many policies on the market which would cover you on the proviso that it is something not already on the cards.
You can't say take out a policy today, then get made redundant next month, and expect the insurer to pay out without question.
This will be covered in the questions they ask you on the application form - are you likely to lose your job in the near future?
