    will do thanks :money:

    first stage complete,

    for the rub i used.

    spoon of salt
    spoon of suger
    spoon of chilli flakes
    some cayenne pepper
    some paprika
    some garlic salt
    a small ground up onion.
    mixed it in a bowl.

    i got some cheap frying steak from asda, its already thin so i took some slices and battered it out to make some nice thin yummy bits.

    i put the steak in a food bag and added the marinade and gave it a good squishing and the kids gave it a good squishing also.

    its now in the fridge till tomorrow.
    will post results forthwith.

    well, its been in the oven for about 6 hours, its shrunk a bit and atarting to look the bizz but not fully dried yet :o
    i think i had it too thick, but it tastes yummy (i had to sneak a bit)

  • ray mears just did this on tv yesterday. cut the meat in to thin slices, then hang it on a rack outside about waist hight and with a slight breeze blowing over it. cover top half of rack with a tent of leaves to stop rain but allow breeze through bottom, and create a small fire underneath to dry air and annoy flies. then wait... quite a while. but supposedly there's easier / quicker ways nowadays. like supermarkets.

    10 hours later, its down to half its original size (more flavor though)
    its very spicy :money: and utterly scrummy.

    perhaps just a little too salty, next time i will get rump steak and cut it thinner.

    Looked out of my second floor window in Bangkok to see a man climb up and place a tray of freshly prepared jerky onto the flat roof below me to dry out in the intense heat. Within 1 minute I couldn't see the meat for flies.

    Jerky is the Yank stuff and pretty tasteless in comparison to Biltong - which is South African. If you want to make biltong this site has a load of info. Pretty easy to make and it tastes much much better than jery.

    To add, biltong can be made using a decent sized carboard box and it will keep for months in the fridge. Biltong was originally used by the Trekkers as a way of preserving meat.

    Biltong, properly made is the food of the gods! If you dont want to make it yourself there are loads of online suppliers who will sell it to you for anything from £20 per kg.
