me again and I am in experiment mode so need to pass results on while fresh in my mind. I am on the last feed now before baking, the last raise wasn`t quite enough ie 3/4 : 1 and not doubled, this one will double and I have set aside a little pure white starter in the fridge having now gone onto added wholemeal which I have also set aside and labelled in the fridge, so they are safe. This last feed was all wholemeal
I needed to remove about 2c, before feeding again, so I made pancakes as I don`t waste flour. I forgot the egg but they turned out delicious, like a sweet crumpet and that is due to the bicarb reacting with the lactic acid and creating more holes. I have added a few currants to the last two and I can see lots of future variations coming up ie no sugar but with salt to make flatbreads or crumpets of a sort. I could add the egg and currants to make similar to welshcakes. Its so easy and frugal
I put the silicone seal back on but only put 2 clips down as it was too open, 2 is fine

Thought I'd revive this thread since my first sourdough loaf is on its second prove, almost really for the oven! I've made loads of bread in the past but never sourdough, so it's quite exciting to see how it turns out!
I bought some starter off eBay in the end (sourdoughboy83, great service, would recommend) because I needed to see 'in the flesh' what a starter should look like. I'd tried 4 times and never really got a starter going here so I think the wild yeasts in the air must be really lazy
Anyway, the sponge was bubbling away all day yesterday, then made the bread last night and it was proving overnight. I've just knocked it back and set it in its brotform for the final prove. I shall report back once baked...0 -

I've made a starter over several days and have a loaf proving. I used the instructions on the Allin8ons packet as to amounts. I was going to put it in the bread maker but chickened out. I only have the Breadmakers Bible.
Just goog*ed and it says to prove for several hours. Is this right? Need my hand held on this one......Thanks

Hi,
Yes sourdough needs to prove for *ages* but it does come out really nicely in the bread-maker. What I do is:
Put the ingredients in the bread-maker and set the program to "French Bread - dough only" basically you want the longest duration dough only program you've got. Then when the program finishes (mine taks 3 1/2 hours - just for dough) switch off the breadmaker, but leave the dough in the tin in the maker and wait at least another 8ish hours (so in total it is about 12 hours since you started). Then I use a "Bake only" program for 55 minutes.
I put my sourdough on in the morning and bake it in the evening.

Thanks for the quick response 7ww. I have a Kenw**d Rapid Bake. It has a French bread setting.
My Breadmakers bible says to reduce the amount of liquid in the bread recipe I am using and adding the starter to by half the amount of the starter. Presumably to take into account the liquid in it.
I have made some dough by hand and looking online it seems to be about 3 hours proving, knocking back and shaping into a loaf after an hour. (going to do this in a minute) fingers crossed! Deffo easier in breadmaker it seems.
