Not sure about the RC recipe cos I made my starter completely differently. However mine sits happily in the fridge as I only make a sour dough loaf about once per week.
Mine separates and becomes VERY yeasty but a quick whisk and it's fine (and this is what the recipe book says will happen/to do).
I think the longest that I've left it between usage/refeeding is about 10 days and it was fine!

not made any myself but did watch river cottage everyday last night and it was all about bread and they made sourdough,oops just re read post, hope it tastes ok:xmastree:Is loving life right now,yes I am a soppy fool who believes in the simple things in life :xmastree:0

it is easy to put a sourdough to sleep. Just feed it with flour and a bit of water and mix then take some of it and put it in a container in the fridge. I always keep a backup in the fridge in a lock and lock and it has been asleep for about 3 months now. To wake it up I add lukewarm water and some 00 flour, more of each every day until it looks as though it is ready to jump out of the jar. I renew my backup every few months but it saves worrying about remembering to save some starter every time, although I do aim to do that. It would be heartbreaking to lose my old sourdough starter0

I use that recipe :-) I love making sourdough. I'm slightly obsessed!
I've never put it to sleep or gone more than a few days between feedings so can't advise there. But when I take my 100ml out for a sponge I feed it again.
I named my starter, Pam. She unfortunately had a tragic accident involving a killer jar and a metal spoon...I was heartbroken! Now I have Pam2. She took almost 3 weeks to get going, I think because the house has been so cold, but I finally made an amazing loaf with her yesterday.

I keep 2 pots of sourdough starter, one I use all the time and the second one is my backup, just in case, as I would hate to be without it0

Can I ask ho long you can keep a starte for and where do you store it?
Mine has been out in the warmth for 4 days now, is that correct? I've been looking at different recipes plus the HFW river cottage one and i'm very confused.0 -

One the starter is ready to use, most people will store it in the fridge (unless you're baking daily). You leave it out for a bit and feed it before using it for baking.
You can keep a starter almost indefinitely, if you feed it and if nothing goes wrong. Some have been passed from generation to generation. You can also freeze some spare starter once it's going well, in case of problems.0 -
As long as you keep feeding it, you can keep a sourdough starter indefinitely. What I tend to do, since I only make surdough bread occasionally, is to keep some in a jar in the fridge (with a breathable cover, like a bit of fabric) and feed that about once a month. Then when I'm planning to bake bread, a few days beforehand I take out a small amount of the sleeping starter from the fridge, and feed it up to use. Regular feeding reactivates it. I feed this active starter every 12 hours.
Some famous sourdough starters have been going since the 1970s!0
