I make sourdough bread three times a week from my own hm starter. Dan Lepard has a website, where I got many useful tips on starting my own yeast and I started mine 18 months ago. The advantage, of course, is that it harvests the yeasts in the air around you. The main thing is not to get too hung up about anything and particularly the flours. I started with plain white and went on from there.
Everytime I make bread I just harvest a piece of dough and put it into a lock and lock in my fridge, where it sits happily for days until I re-awaken it by feeding it. I mostly make wholemeal bread and so the starter in my fridge is wholemeal at the moment but if I want to make white bread then I just feed it with white flour and if I need it to be very lively then I give it some 00 flour. I don`t waste any of it. If I need to remove some dough them I roll it flat and make flatbreads
I have been experimenting lately although I have the real breadstone, peel and a scalpel for slashing and also a mister. I simply put my dough into my remoska and leave to rise for as long as it takes, maybe 12 hours, whatever I need to suit me and I am getting super, brilliant results at a far lower energy cost.
I always have an emergency starter at the back of the fridge, it has been there for ages and I give it a bit of food every few months. This is my safety net in case I forget to save some dough
Sourdough bread slowly raised tastes gorgeous and is so good for you, providing probiotics. I never knead my bread these days, I just sprinkle four on top and gentle stretch, fold and turn0 -
I made sourdough bread for the 1st time today. It is the best loaf i have ever had. It rise so well and tasted lovely. I will be doing it again.0

I had a succesful starter , but I didnt like the taste and the smell when it was cooking turned my stomach , its definatly an aquired tasting bread.0

I have 3 sourdough starters asleep in my fridge. I think I`ll try a breadmaker version. Can`t beat sourdough bread0
