I finally decided to use dates, cake just out of oven, waiting for it to cool a little before tasting. Like the idea of apples though. Might try that next time.0

Just had a slice of cake which was fine but the dates overwhelmed the butterscotch flavour. The cake will not be wasted but I would have preferred to eat the bar of butterscotch chocolate instead of putting it in the cake! Will definitely try apple next time.0

Well during World War II when I was a very tiny child, my mother used mashed parnips in baking but that is probably a bit extreme ! I supect apples would work well and help to make a nice moist cake. If you use Bramleys you might need to add some extra sugar as they can be a little tart.
yes I would have said use parsnips as well, my mum used to make parsnip fritters and they tasted just like bananas!0
