How long does cooked pasta keep?

I want to start making pasta salad to take to work for lunches. I thought it would be easier (and therefore means I'm more likely to stick to it!) if I could cook a huge batch of pasta a couple of times per week instead of every day.

So if I cook a batch on a Sunday, will it last until Tuesday? I was going to store it in a plastic box in the fridge, would that be the best way?

    it should last 2 days.

    you could cook a batch to cover a few weeks then freeze the pasta in individual portions.

    Not exactly pasta salad, but I've been having a slice of this in my packed lunch at work for a few weeks now. It's very filling and, if you swap the milk and butter some manufacturers recommend for more water, it's evidently "sin free" as well.

    PASTA & COTTAGE CHEESE FLAN

    Makes about 0.75L

    INGREDIENTS

    1 packet of pasta in sauce
    Water
    1 egg
    200g tub of cottage cheese
    ¼ of a teaspoon of ground pepper

    METHOD

    Make up the pasta in sauce, according to the instructions on the packet but replacing any milk with an equal quantity of water and omitting any butter.

    Break the eggs into a bowl and pick out any bits of shell. Mix up the eggs. Add the cottage cheese and the pepper. Mix up again.

    Put the pasta and sauce into a flat ovenproof dish. Level off the surface. Leave to cool until the sauce has thickened. Put the egg and cottage cheese mixture on top. Spread to cover the pasta.

    Cook in a preheated oven at 180°C, 350°F, gas mark 4 for 20 to 30 minutes until golden on top.

    ADDITIONS & ALTERNATIVES

    Put a sliced tomato on top. Use ‘quark’ instead of the cottage cheese.

    InStore (Poundstretcher?) have packets of Batchelor (how apt - I've only just noticed that) pasta in sauce marked 85p, for just 49p.

    Oooh never thought about freezing it, that would make it so much easier.

    Stephen that recipe looks absolutely yummy, I think I'm going to be spending some time in the kitchen this afternoon making that!

    What other pasta salads can you make? (Meat free pls as I'm on Stephens Slimming World menu ;) :rotfl:)
  • I make Tuna, Pasta and sweetcorn to add to my salads for lunch.
    It lasts a couple of days in the fridge. The night before I will take out my "portion" add abit of mayo and add to the salad so all I have to do in the morning is take it out the fridge in my rush to get to work on time!!

    Oh I started slimming world today, hence the question in the first place!

    I am going to do pasta, sweetcorn, chopped peppers, chopped onion, fat free dressing and maybe a dollop of low fat cottage cheese on the top.

    You're welcome. And you can use any variety of pasta in sauce as well, to ring the changes. I have yet to find one it doesn't work with, although the ones with the "penne" tube shaped pasta are best at physically anchoring the egg and cottage cheese topping onto the pasta sauce layer.

    I want to make up a batch of pasta at the start of each week for my lunches, how long will it keep for? I'll be adding a different sauce each day made up from leftovers/defrosted hm sauces.
