black-saturn's chocolate mousse

Does anyone know if it would be ok to sub the single cream with double? I got a tub of extra thick double cream yellow stickered at 45p instead of £2.30 today and that's the only thing I can think of to do with it! Also any ideas for 2 tubs of mascarpone that need using in the next day or two? I've not used it before.

    I would have thought that double cream would be ok, perhaps just thicker and maybe richer.

    Mascarpone i have used to make a chessecake - crush some digestive biscuits (add a little melted butter if you want to make them stick together a bit better) and put them in the bottom of a cake tin, or similar, I mixed the mascarpone with some lemon juice to taste - add a bit of icing sugar if needed - and put it on top of the digestive biscuit. Leave in the fridge to go really cold.

    I guess you could add all sorts of fruit to the mascarpone such as strawberries, raspberries etc perhaps whizzed in a blender and then folded into the mascarpone. Or perhaps some chocolate or cocoa powder....

    I did a very green and very healthy spinach pasta salad with some mascarpone over the weekend.

    For 4 servings, boil 400g of pasta (I used fusilli). Whizz 113g of baby spinach, 1 clove of garlic, 250g tub of mascarpone, 30g grated Parmesan & juice of 1 lemon in a food processor until smooth. Drain the pasta, return the pasta to the pan, add the sauce and 50g of pine nuts. Mix together over a low heat. Serve and sprinkle wih a bit more grated Parmesan.
    The acquisition of wealth is no longer the driving force in my life. :)

    Whizz up the marscapone with a couple of tins of tomatos and some basil (plus a squirt of tomato puree possibly). Makes a delish tomato and marscapone sauce for pasta which you can freeze. If you have no basil now it can be added when it is defrosted and ready to heat up.

    The thanks button doesn't seem to be working but those are all brilliant suggestions and I'm going to print them out. Since I'm not here tomorrow I think Thursday's tea will be mascarpone and tomato sauce or maybe the spinach salad, probably with added yellow-stickered courgettes with choc mousse for pudding.
