Chimney for a Range Cooker

I am thinking about making my chimney breast in the kitchen into an opening for a range cooker. Currently there is nothing in there just a load of rubble and a few remaining pipes from the old back boiler.
I know I need to make the hole bigger but what would be a good size??? Also what else do I need to do to make the chimney safe and usable??? Do I need an extractor up there as well or can I just use the chimney hole??
